What is a Registered Dietitian?

A Registered Dietitian (RD) or Registered Dietitian Nutritionist (RDN) is an expert in food and nutrition. They offer guidance, counseling, and practical solutions for a healthy lifestyle. In a nutrition-focused society, Dietitians can distinguish between evidence-based information and passing trends, translating nutritional science into everyday decisions.


Meet our Director of Health and Wellness, Kaiten Zajac, MS, RD, LDN

Director of Health and Wellness, Kaiten Zajac

Kaiten Zajac is Tulane Hospitality’s Director of Health and Wellness. Kaiten is a graduate of the University of Texas where she completed her Bachelor of Science in Dietetics. She then went on to complete her Dietetic Internship with Abilene Christian University, with an emphasis on Community Nutrition and Poverty, where she primarily focused on bringing healthy and sustainable foods to underserved populations. She later went back to school and graduated with distinction from Arizona State University with her Master of Science in Nutrition and Dietetics. Kaiten comes to Tulane with 6 years of experience with Aramark, previously spearheading the award-winning food allergy program at Auburn University, and most recently supporting various schools across the Midwest region. She works with the culinary team to provide special dietary accommodations to students with food allergies and other dietary restrictions, and holds events throughout the year to promote overall health and wellness. Kaiten aims to help students gain a better understanding of their unique nutritional needs so that they feel empowered to make choices that best fit their goals.


Meet our Registered Dietitian, Summer McNeill, MS, RD, LDN

Summer McNeill is Tulane Hospitality's Registered Dietitian. Summer is a graduate of Appalachian State University where she earned her Bachelor of Science in Nutrition and Dietetics. She then completed her Dietetic Internship and Master of Science in Nutrition at Auburn University. Summer comes to Tulane from the University of Virginia where she was a dietitian for Virginia Athletics. At Virginia, Summer provided one on one nutrition support and education for the football, rowing, and wrestling teams while also assisting with the athletic dining hall.  

Summer is passionate about performance nutrition and creating an environment where all foods fit.  She believes that food is more than just fuel and that food has the power to help us cultivate relationships with ourselves and with the people and cultures around us. She hopes to guide and empower students to take control of their own health and performance through the food choices they make.
